Il Grignolino della realtà artigianale piemontese Sette rappresenta un’interpretazione schietta e vivace di questo interessantissimo vitigno autoctono del Basso Piemonte. Originario delle colline del Monferrato, dove opera la cantina Sette, il Grignolino deve il suo nome al termine dialettale “grignolo”, che significa “vinacciolo”, a indicare l’abbondanza di vinaccioli, e quindi di tannini, che caratterizza gli acini. Gianluca Colombo, Gregorio Gitti e Gino Della Porta, soci che hanno dato vita al piccolo progetto viticolo Sette, hanno puntato su quest’uva assieme a due altre varietà tradizionali del Monferrato: Barbera e Moscato Bianco. Sette Grignolino costituisce un’espressione in purezza dell’omonimo vitigno autoctono, le cui uve provengono da due piccolissimi appezzamenti impiantati su terreni sabbiosi sulle colline che circondano Asti. La conduzione agronomica segue i dettami dell’agricoltura biologica e della biodinamica e la vendemmia è svolta rigorosamente a mano. In cantina i grappoli vengono vinificati in rosso tramite fermentazione alcolica spontanea, associata a 15 giorni di macerazione sulle bucce durante i quali vengono applicate tecniche di estrazione estremamente delicate. Il processo fermentativo si conclude in anfore Tava da 7.5 ettolitri, vasi vinari in cui ha luogo anche la fase di maturazione di alcuni mesi che precede l’imbottigliamento finale. Il colore del Grignolino Sette è rosso granato scarico tendente al rosato. Affascinante e armonioso il quadro olfattivo, dipinto da suggestioni di violetta, frutti di bosco, ciliegia, pepe nero e petali di rosa. Sorso fresco e immediato, tannico e piuttosto vinoso, contraddistinto da una dinamica chiusura che richiama le fragranti sensazioni fruttate e floreali avvertite al naso.
